Cranberry Power Bars

With cranberry juice and dried cranberries, these very cranberry energy bars are drizzled with a little dark chocolate. Loaded with nuts, chia seeds and quinoa flakes, they will help you power through any busy day.

Total Time: 20 minutes (+ 8 hours chilling time)
Makes: 8
Ingredients:
1 cup pitted Medjool dates
1 cup quinoa flakes
1/2 cup Cranberry Juice
1/2 cup dried cranberries
1/2 cup chia seeds
1/2 cup almonds
1/2 cup walnuts
1/2 cup shredded coconut
2 tbsp coconut oil, melted
1 tsp vanilla extract
1/4 tsp sea salt
1 oz dark chocolate, melted
Instructions:
1. In food processor, pulse dates until they start to come together into a ball. Add quinoa flakes, cranberry juice, cranberries, chia seeds, almonds, walnuts, coconut, coconut oil, vanilla and salt; pulse until combined.
2. Scrape mixture into parchment paper–lined 8- x 4-inch loaf pan. Press firmly into even layer; drizzle with melted chocolate.
3. Cover and refrigerate overnight. To serve, cut into 8 bars. (Can be refrigerated in airtight container for up to 1 week.)
Tips:
• Also delicious with pecans and hazelnuts.
• Alternatively, refrigerate mixture until set and roll into power balls.
