Cranberry Power Bars
With cranberry juice and dried cranberries, these very cranberry energy bars are drizzled with a little dark chocolate. Loaded with nuts, chia seeds and quinoa flakes, they will help you power through any busy day.Prep Time: 20 minutesCook Time: 0 minutesTotal Time: 20 minutes (+ 8 hours chilling time)Makes: 8Ingredients: 1 cup pitted Medjool dates1 cup quinoa flakes1/2 cup Cranberry Juice1/2 cup dried cranberries1/2 cup chia seeds1/2 cup almonds1/2 cup walnuts1/2 cup shredded coconut 2 tbsp coconut oil, melted1 tsp vanilla extract1/4 tsp sea salt1 oz dark chocolate, meltedInstructions:1. In food processor, pulse dates until they start to come together into a ball. Add quinoa flakes, cranberry juice, cranberries, chia seeds, almonds, walnuts, coconut, coconut oil, vanilla and salt; pulse until combined. 2. Scrape mixture into parchment paper–lined 8- x 4-inch loaf pan. Press firmly into even layer; drizzle with melted chocolate. 3. Cover and refrigerate overnight. To serve, cut into 8 bars. (Can be refrigerated in airtight container for up to 1 week.)Tips: • Also delicious with pecans and hazelnuts.• Alternatively, refrigerate mixture until set and roll into power balls.
