Apple Quinoa Bowl
This nutritious apple-spiced breakfast bowl will help you power through any busy day.Prep Time: 15 minutesCook Time: 15 minutesTotal Time: 30 minutesServes: 4Ingredients: 1 1/4 cups apple juice3/4 cup quinoa2 apples, peeled, cored and chopped1/2 tsp ground cinnamon1/4 tsp ground nutmeg2 tbsp maple syrup1 cup mixed berries1/4 cup chopped toasted pecans2 tbsp pumpkin seedsInstructions: 1. In saucepan, bring apple juice and 1 cup water to boil. Stir in quinoa, apples, cinnamon and nutmeg. Reduce heat to medium-low; cook for 15 to 20 minutes or until quinoa is very tender and most of the liquid is absorbed. Stir in maple syrup.2. Divide quinoa mixture among 4 bowls. Top with berries, pecans and pumpkin seeds. Tips: • Serve with a dollop of yogurt if desired.• Substitute sunflower seeds or chia seeds for pumpkin seeds if desired.
