Apple Coconut Crisp
This old-fashioned apple dessert with coconut-oat crumble topping is guilt-free comfort food. Prep Time: 15 minutesCook Time: 50 minutesTotal Time: 1 hour 5 minutesServes: 4 Ingredients: Apple Filling:4 apples, peeled, cored and chopped1/4 cup brown sugar2 tbsp all-purpose flour2 tbsp coconut oil, melted1/2 tsp ground cinnamon1/4 tsp ground nutmegPinch ground cloves1/2 cup apple juiceTopping:1/2 cup large-flake oats1/4 cup unsweetened shredded coconut 3 tbsp brown sugar4 tsp all-purpose flour3 tbsp coconut oilPinch saltInstructions: 1. Apple Filling: Preheat oven to 375°F. Toss together apples, brown sugar, flour, coconut oil, cinnamon, nutmeg and cloves. In large sauté pan set over medium heat, cook apple mixture and apple juice, simmering for 3 to 5 minutes or until apples are tender. Spoon into small 4-cup baking dish.2. Topping: Stir together oats, coconut, brown sugar and flour; using fingertips, cut in coconut oil until crumbly. Sprinkle evenly over apple mixture.3. Bake for 45 to 50 minutes or until topping is golden brown and filling is thick and bubbling. Serve warm or at room temperature.
