Grilled Mojo Chicken Tacos
Chicken marinated in a citrus and spice mojo sauce and pickled red onions make for some very tasty tacos. Prep Time: 20 minutesCook Time: 20 minutesTotal Time: 40 minutes (+ 4 hours marinating time)Serves: 4 Ingredients: Mojo Marinated Chicken:1 cup orange juice1/4 cup lime juice2 tbsp olive oil3 cloves garlic, minced1 tsp each dried oregano, ground cumin and chili powder1 tsp salt and pepper1 lb boneless skinless chicken thighsOrange Juice Pickled Red Onions:1 red onion, thinly sliced1/2 cup orange juice1/2 cup cider vinegar1/2 tsp each salt and granulated sugarTacos:2 cobs corn, husks and silk removed8 corn tortillas, warmed2 cups shredded lettuce1/3 cup finely crumbled feta cheeseInstructions: 1. Mojo Marinated Chicken: Stir together orange juice, lime juice, olive oil, garlic, oregano, cumin, chili powder, salt and pepper; add to resealable plastic bag along with chicken. Refrigerate for at least 4 hours or up to overnight. 2. Orange Juice Pickled Red Onions: Stir together red onion slices, orange juice, cider vinegar, salt and sugar; refrigerate for at least 1 hour or up to 8 hours.3. Tacos: Preheat grill to medium-high heat; grease grate well. Remove chicken from marinade and shake off any excess marinade. Grill chicken for 6 to 8 minutes per side or until grill-marked and cooked through. Let stand for 5 minutes; slice thinly. Meanwhile, grill corn for 12 to 15 minutes or until grill- marked and tender. Let cool slightly and slice kernels from cob. 4. Assemble tacos with tortillas, lettuce, chicken, corn, pickled onions and feta cheese.Tips:• Substitute pork tenderloin for chicken and shredded cabbage for lettuce if desired.• Add avocado slices to the tacos if desired.
