This nutritious apple-spiced breakfast bowl will help you power through any busy day.

1 1/4 cups apple juice
3/4 cup quinoa
2 apples, peeled, cored and chopped
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
2 tbsp maple syrup
1 cup mixed berries
1/4 cup chopped toasted pecans
2 tbsp pumpkin seeds
1. In saucepan, bring apple juice and 1 cup water to boil. Stir in quinoa, apples, cinnamon and nutmeg. Reduce heat to medium-low; cook for 15 to 20 minutes or until quinoa is very tender and most of the liquid is absorbed. Stir in maple syrup.
2. Divide quinoa mixture among 4 bowls. Top with berries, pecans and pumpkin seeds.
• Serve with a dollop of yogurt if desired.
• Substitute sunflower seeds or chia seeds for pumpkin seeds if desired.
