Apple Coconut Crisp

This old-fashioned apple dessert with coconut-oat crumble topping is guilt-free comfort food.

Ingredients:
Apple Filling:
4 apples, peeled, cored and chopped
1/4 cup brown sugar
2 tbsp all-purpose flour
2 tbsp coconut oil, melted
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
Pinch ground cloves
1/2 cup apple juice
Topping:
1/2 cup large-flake oats
1/4 cup unsweetened shredded coconut
3 tbsp brown sugar
4 tsp all-purpose flour
3 tbsp coconut oil
Pinch salt
Instructions:
1. Apple Filling: Preheat oven to 375°F. Toss together apples, brown sugar, flour, coconut oil, cinnamon, nutmeg and cloves. In large sauté pan set over medium heat, cook apple mixture and apple juice, simmering for 3 to 5 minutes or until apples are tender. Spoon into small 4-cup baking dish.
2. Topping: Stir together oats, coconut, brown sugar and flour; using fingertips, cut in coconut oil until crumbly. Sprinkle evenly over apple mixture.
3. Bake for 45 to 50 minutes or until topping is golden brown and filling is thick and bubbling. Serve warm or at room temperature.
Tips:
• The crisp can be made up to 1 day in advance, then rewarmed in the oven before serving.
• Serve with a dollop of coconut ice cream or yogurt.
• Use your favorite apples, such as Fuji, Cortland, Crispin, Golden Delicious or Honeycrisp.
